Food photos and reportage of the making of tacos made by Santiago Mumo in his manufacture in Mexico City.

Santiago is working with producers who grow old maize varieties. This is the reason for the different colored tortillas and tortilla chips he is producing for fine dining restaurants all over in Mexico City.
